Mozzarella and Chilli Crostini

Thinking of having a party or gathering soon and in need of some food suggestions? Or are you just wanting to have a cute little lunch with some family or friends. This recipe is perfect for any occasion, and they are super tasty! This one in particular is vegetarian as well, so perfect for all of the veggies out there! This recipe has been inspired by Jamie Oliver, so full credit goes to him!

What you’ll need:

2x Mozzarella balls 

1x Loaf of ciabatta bread

1x Clove of garlic

1x Red chilli

1x Lemon

Olive oil

Fresh basil

Sea salt

Firstly, you will need to cut the ciabatta bread into approximately 1cm slices and place these onto a pan or grill. You only want to grill them until they are slightly toasted, so it should only take a few minutes on each side. Of course, it is completely up to you how toasted you want them to be!

Once you have taken them out of the pan, you will want to gently rub them with some garlic. Preferably you’ll want to do this whilst they are still hot, so that they can soak in the hint of garlic. After you have done this, you will need to drizzle each slice with some olive oil and sprinkle some salt over the top!

With your mozzarella, all you have to do is tear this into small pieces and place them as you wish over your already prepared crostini. Once you have done this, take your chilli and remove the seeds and cut these into very tiny pieces. Sprinkle these over the crostini as generously as you would like, but of course chilli is not everybody’s favourite so you can replace this with anything you fancy! Top this with some grated lemon and finally drizzle some more olive oil over the top. I also add some fresh basil to give it the finishing touches.

It is such a simple recipe that takes about 15-20 minutes, and they are super tasty! There are so many toppings you can add onto the crostini’s if mozzarella and chilli aren’t your thing, so just experiment with whatever you like! Let me know how you change this up to suit your tastebuds!
